- 3 eggs
- 3 shiitake mushroom, cut into thinly slice
- ⅓ tsp salt
- ½ tsp mirin
- 1 tbsp vegetable oil
- ½ tsp soy sauce + ½ tsp water
- Drop the egg in a bowl, and beat, add the salt and mirin and mix well.
- Heat the oil in a frying pan and add the shiitake mushroom fry slowly over a low heat. Pour the egg mixture in a frying pan, stir- fry briefly and make rolling shape.
