Sakura Shrimp and Bourdock Salad 桜えびとごぼうのサラダ

- 70g sakura shrimps
- 2-3 salad burdock
- 1-2 extra virgin olive oil
- salt and pepper
- 3 tbsp minced parsley
- Cut the burdock in short-size rectangles, and boil briefly, and drain. Blanch the sakura shrimps and drain on a strainer.
- Place the burdock on a dish plate, put the sakura shrimps on the burdock, pour over the extra virgin oil on top, sprinkle the salt and pepper, garnish with minced parsley on top.
