- 2 whole Alfonsino(golden eye bream)
- 1½cup water
- ¼ cup sake
- 2 tbsp sugar
- 4 tbsp soy sauce
- 4 tbsp mirin
- Rinse the Alfonsino under the cold water, and drain with paper towel, and make a cross-shape incision on one side.
- Combine the water, sake, soy sauce and mirin in a large shallow pot or frying pan, and bring to the boil. Add the fresh ginger and cook for 30seconds. Add the Alfonsino with some space in between, place a drop-lid on top of it and over medium low heat.
- When the liquid is reduced to about half.
- Carefully lift the fish on to serving plates and spoon some of the cooking liquid over it.
