Press the calyx of the pepper towards the inside and remove it as all the seeds and cut in half length ways.
Cut the shiitake mushrooms, naganegi-onion, and ginger into mince.
Place the ground pork in a bowl, and add the shiitake mushrooms, naganegi-onion, ginger, sake, soy sauce, salt and pepper and mix well. Add the sesame oil and mix vigorously.
With a starch, dust the inside the green pepper with plenty of starch.
Stuff the green pepper with stuffing.
Place the oil in a frying pan, line up the green peppers with the eat part on the bottom and sauté over low heat until it is heat through.
After 4-5 min, flip the stuffed peppers and add 1 tbsp. sake, cover with a lid and gently saute.
Arrange the stuffed peppers on a plate, garnish with grated radish, and pour the ponzu soy sauce.
