Today’s Japanese Cooking Style is called Japanese Pickles or 漬け物 in Japanese. This is like a tradition food of Japanese; you can find this anywhere in Japan and maybe as well in your area in Oriental Shops. This is just one of much style of Japanese Pickles. Very easy to make and very tasty too. Enjoy. Now to see what we need to make our Japanese Pickles Recipe.
Ingredients
1 cucumber
1 carrot
4-5 leaves cabbage
1 clove ginger
1 tsp salt
½ tsp sugar
1 tbsp rice vinegar
Instructions
Cut the cucumber into thinly slice, peel the carrot and cut into 4㎝ lengths thinly slice, cut the cabbage into bite-size and cut the ginger into strips.
Place the cucumber, carrot, cabbage and ginger in container and mix. Sprinkle the salt, sugar, and rice vinegar on the vegetable, put a plate on top and weight it down with something heavy like a paperweight or large food can. Leave for least 10 hours- overnight.
Before serving, squeeze out any moisture using your hands. Place in small dish and drizzle some soy sauce or ponzu soy sauce over top to taste.

I grew up in Hawaii and raised by my Japanese Grandmother and took care of my Japanese Great Grandmother until she passed at 98. Both could speak english but spoke mostly Japanese to us. The recipes you post remind me of food I grew up on only my Grandmothers never left recipes written so I am very much enjoying being able to make the foods they used to make for me now. I love the “authentic” Japanese foods that you are posting recipes for. Thank you so much! Now my children may experience the same 🙂 Arigato Gozaimasu!
