- 500g sweet potato
- 2 dried gardenia pods
- 1½ cup sugar
- 12 candied chestnuts
- ½ cup chestnuts syrup
- 3 tbsp mirin
- Cut the sweet potato into 1㎝ thick rounds peel and soak in cold water(change water several time) to eliminate bitterness.
- Place the sliced sweet potato in a pot, and fill the pot with just enough water to cover the potato slice. Place gardenia pods, cracked and wrapped in gauze, in the pot and bring to the boil. When it comes to the boil, reduce the heat to low and simmer until the potatoes become tender enough for a bamboo skewer to piece smoothly. Strain the potato while hot.
- Add the strained potato, chestnut syrup and sugar and mix well while heating over a high heat. When the mixture becomes glossy, add the chestnuts and mirin, reduce the heat to low and mix gently. Attentions to the chestnuts as they scorch easily, when the chestnuts are warmed, transfer the whole mixture to a tray. Spread the mixture on the tray, and let stand until cool.
