- ½ cup Black Soybeans
- 100g sugar
- water
- ½ tbsp soy sauce
- Rinse the black soybeans in cold water, and soak in 1½ cup water over night.
- Place the black beans and the water in which they were soaked in a pot, and bring to the boil over a medium heat while skimming off foam. Cover with a drop-lid and simmer over a slightly stronger low heat for 40-50 min, make sure that the simmering liquid always cover the soybeans, and add the water every time the liquid is reduced.
- When the soybeans are tender, remove from the heat, in another pot, mix the sugar and 1cup water, and boil briefly to make syrup. Let the drained soybeans rest in the syrup over night to allow them to come to room temperature.
- Transfer everything to a pot, and place over a low heat, add the soy sauce, and simmer for about 15min before turning off the heat.
