- ¼ cup salad oil
- 60g flour
- ½ cup diced onion
- 1 bell pepper , diced
- ½ celery, diced
- 3 garlic cloves, minced
- 2 tomatoes, diced
- ½ cup tomato puree
- 1 pack okura chopped
- 1 chicken breast, cut into chunks
- 2 cube vegetable stock
- 3g thyme leaves
- 1 bay leaf
- salt and pepper
- 3 cups cooked rice
- Heat the oil in a pot , add the flour and stir , flour and oil together till smooth.
- Add the onion, celery and pepper, stirring constantly, add the garlic.
- Add the tomato puree, stock, tomatoes, thyme, bay leaf, salt and pepper. Cover and cook over low heat for about 20-30 min. Add the chicken and cook until is tender. Serve with cooked rice.
