- 4 fillets white fish
- 4 slice of lemon
- 4-5 tbsp flour
- 30g butter
- 100cc white wine
- 2 tsp mustard
- 100cc fresh cream
- pinch of parsley
- salt and pepper
- 4 potatoes for garnish (1 per person)
- Peel the potato and boil until tender. Season fish with salt and pepper.
- Wrap fish in aluminum foil with a slice of lemon and parsley. Boil the wrapped fish for about 20 min, and then take out of the water. Keep of broth.
- Make to sauce: Heat the butter first, then add the flour, stir mixture until flour is smooth, cook until you can’t taste the flour. Slowly mix the fish broth, season sauce with parsley and mustard.
- For a richer taste, add the white wine and fresh cream. Serve with sauce.
