- 2 pack tofu
- 2 shiitake mushroom, cut into thinly slice
- 5㎝ carrot, cut into 3㎝ lengths strip
- 50g bamboo shoot, cut into 3㎝ lengths strip
- ½ bunch mitsuba, chopped
- ½ tsp sake
- 1 tsp soy sauce
- a little of sugar
- a little of salt
- 1 tbsp flour
- vegetable oil for deep-frying
- Wrap the tofu in kitchen paper and put some weight on top to drain off excess water.
- Place the tofu in a bowl, and mash, add the sake, soy sauce, sugar, salt and flour, and mix well, add the shiitake mushroom, carrot, bamboo shoot, and mitsuba, and mix well again, shape into 8 balls.
- Heat the oil to 170℃, deep-fry the tofu- balls, until float to the surface and light brown color.
- Serve with soy sauce, grated ginger and sudachi.

Probably very tasty, sorry that I can not eat tofu. Can I substitute any other fish?
