- 4 slice steaks (2㎝ thick)
- For Miso marinade
- 400g miso
- ½ cup sake
- 1 cup mirin
- 60g sugar
- Make to miso marinade: Combine the miso, sake, mirin and sugar into a pan, and bring to a boil. Stirring over low heat to about 20 min until the sauce is thickening.
- Spread 2 tbsp. of the marinade on each side of the steaks and cover with plastic wrap. Let stand in a refrigerator for 1-2 days.
- After 1-2 days, remove the marinade from the steaks with a spatula and cut into bite size pieces. Grill the steaks on both sides. Serve with wasabi and sudachi etc., your taste.

Miso will surely add up some spice to the steak. The first time I tasted Miso flavor in one of the dishes my friend prepared it was odd tasting but after incorporating it to my other dishes I’m now used to it and loving it. Thanks for the endless recipes.
Because of Miso’s sour taste it would be nice to add some sugar to make it a little bit sweet and sour. Perfect marinate indeed. Thanks.
