- 4 fillets salmon
- 150g ground pork
- 100g burdock
- ¼ onion, cut into finely chopped
- 2-3 tbsp milk
- 1 egg
- ½ tbsp juice of ginger
- salt and pepper
- vegetable oil
- 8 slice white bread
- lettuce, grain mustard
- For Dill sauce:
- 1 pack dill leaves
- ½ cup mayonnaise
- 2 tbsp soup stock
- a little of japanese mustard
- a little of soy sauce
- salt and pepper
- Make to dill sauce: Cut the dill into finely chop. Place the mayonnaise, soup stock, Japanese mustard, soy sauce, salt and pepper into a bowl. Add the chopped dill and mix together.
- Cut the bread into circles with pastry cutter. Tear the leftover the bread to make crumbs and soak 30g of crumbs in the milk.
- Peel and cut the burdock into sasagaki pieces and soak in water and drain.
- Remove skin and bones from salmon fillets, and mince the fillets with a knife.
- Mix the salmon, ground pork, egg, soaked bread crumbs, and ginger juice in a bowl. Season with salt and pepper and add the onion and burdock. Mix together. Shape the mixture into 4 burger( same size as the bread)
- Heat the oil in a frying pan. Place the burger in it and cook until browned on both sides.
- Serve with toasted bread, lettuce, grain mustard, and dill sauce.
Naoko, this recipe looks really delicious! And you’re right about it being healthy – I have one quick question: is it possible to substitute a leaner meat for pork, maybe ground turkey?
