Stir-Fried Eggplant with Spicy Miso 茄子の辛み炒め

Serves: 2
- 3 eggplants
- 2 tbsp miso
- 2 tbsp sake
- 2 tbsp sugar
- tobanjyan( Chinese spicy miso)
- vegetable oil
- Slice the eggplant. Heat the oil in a frying pan, and add the egg plant and stir- fry until wilted.
- Add the miso, sake, sugar and little of tobanjyan, and stir- fry.

Looks like a great, simple dish. I’ve used tobanjyan for a lot of korean cooking, but not so much for Japanese. I may try this tonight! Also, do you recommend any particular kind of miso?

Hiya, You can use any kind of miso. Basically Kome=Miso is recommended. If you like to have it a little more sweet taste, try using “Saikyo-Miso”(White Miso) or more of a richness taste try “Haccho-Miso”(Red Miso). I hope that this helps out.

I picked up some eggplant at an international grocery last night and went hunting for ways to enjoy it. This simple recipe fit the bill perfectly; my wife and I both loved it!
Simple and looks yummy.
have you tried frying eggplant with eggs? I usually grill it and them fry it with egg.
