- 4 eggplants
- 100g thinly sliced pork belly
- 3 thinly sliced ginger
- salt, pepper, sake
- Cut off the stem of eggplant and cut into 1㎝ wide round. Put the eggplant in a bowl and sprinkle 1tsp salt, let stand for 10 min. Then, wash it briefly and squeeze out excess moisture.
- Cut the pork into 2-3㎝ wide pieces and peel the ginger and cut into strips.
- Heat the frying pan and add the pork (not add oil) fry to until crispy over low heat. Add the eggplant and fry, when the eggplant color was brightly, add the ginger and fry briefly. Add 1 tbsp sake, season with salt and pepper.
