Takikomi Gohan Meals: Tai Meshi (鯛飯)

Ingredients
  • 1 medium size sea bream
  • ⅔ tbsp salt for sea bream
  • 3 cups rice
  • 3㎝×10㎝ square 1 konbu kelp
  • 4 cups water
  • 3 tbsp soy sauce
  • 2 tbsp sake
  • ⅔ tsp salt

Instructions
  1. Wash the rice for 30 min before cooking.
  2. Sprinkle the salt on sea bream and grill for about 10 min with roaster.
  3. Put the rice, konbu kelp, sake, soy sauce, salt and dashi stock in an earth-pot, and mix. Put the grilled sea bream on rice, and over a high heat with cover. When it becomes the boiled, turn down the medium heat and cook for 5 min. And turn down a low heat and cook for about 7 min.
  4. Turn off the heat and let stand for 10 min.
