- 2 portion cooked rice
- 2 eggs
- ½ lettuce
- ¼ onion
- ¼ awabi mushroom
- 2 hams
- vegetable oil
- salt and pepper
- 1 cup dashi stock
- 1.5 tbsp soy sauce
- 0.5 tbsp mirin
- 0.5 tbsp sugar
- 1 tbsp starch
- 1 tbsp water
- salt
- Cut the onion, awabi mushrooms, lettuce, and ham into finely chop. Beat the egg.
- Heat the oil into a frying pan, add the egg and fry too briefly and transfer the plate and set aside. Add the little of oil in a same frying pan. Add the onion, awabi mushrooms, and ham and fry. When it becomes tender, add the cooked rice and fry over a high heat. Add the egg and lettuce and fry continue. Season with salt and pepper.
- Combine the dashi stock, soy sauce, mirin, and sugar in a pan and heat. When it becomes to a boil, and add the starch dissolved in the water to thicken it. Then season with salt.
- Place the fried rice on a plate, pour on thick sauce.
