- 300g spinach
- 300g ricotta cheese
- 150g Parmesan cheese
- 130g flour
- 2 eggs
- nutmeg
- salt and pepper
- Boil the spinach, and blend in a food processor, squeeze water out of spinach.
- Add the eggs, ricotta cheese, parmesan cheese, flour, salt and pepper and nutmeg; mix well with a wooden spoon until dough doesn’t stick to your hand.
- Roll into bite-size pieces, To cook the gnocchi, bring the water to boil, adding about 2 tsp of salt.
- Gently add gnocchi to the boiling water and cook for 2-3 in until gnocchi float to surface, and drain the gnocchi and put into a dish, and sprinkle with the parmesan cheese.
- Bake in oven at 180℃ for 10-15 min until toasted on top.
