- 2 cup rice- KOSHI HIKARI, SASA NISHIKI, AKITA KOMACHI, etc.
- 2-2.5 cup water
- Place the rice in a large bowl, fill with cold water and stir rice, discard the water.
- Rub the grains gently against each other with the heel of your hand, rinse under cold running water and drain, and continue rubbing and rinsing until the water becomes clear.
- Soak the rice in cold water for about 15 min, and drain in a strainer, and let stand for 15 min.
- Place the washed rice in a pan; add the same amount water to pan as rice. Cover the pan and turn the heat on high, bring to a boil and simmer for 10-12 min over a low heat. Turn off the heat and let stand for about 10min, remove the lid and stir the rice.
